We might not be the best at relaying this message to our customers, but we actually bake all of our cakes ourselves using tried and tested recipes. In this post, I’d like to get across our passion for baking a little bit, why we love it and what cakes are our big hitters.
We bake a lot of tray bakes, as they taste great and they’re easy to transport. We do love a good old fashioned Victoria Sponge but that kind of layered and round cake is a bit tricker for us to move about when we’re going to and fro from different events. So in terms of tray bakes, we love a brownie and different twists on that such as Biscoff brownie or brownie with roasted almonds or hazelnuts. Our new favourite twist is adding a bit of orange for that Terry’s Chocolate Orange kind of flavour. We like to keep our ingredients simple for our brownie so we use a lot of butter and melted chocolate. We don’t add too much oil or cocoa powder as we. feel this hampers the flavour quite a bit. In terms of texture, we like quite a heavy and gooey brownie rather than a light and fluffy one. Next on our list to try out a Biscoff Brownie.
We also love a good old cookie. A popular and tried and tested cookie we offer are our peanut butter chocolate chip cookie. I love the whole process of making cookies, from chopping up the chocolate into not too fine chunks, to the rolling of the cooky dough into delightful little perfectly round balls of pure goodness, it’s a process that I never tire of. So back to our recipe, we use a load of crunchy peanut butter, almost 200g for about 20 cookies. We also use a considerable amount of chocolate, again around 200g of it so it matches the peanut butter. We don’t know about you but we love a nice crunch to our cookies so we leave them in the oven for a tad longer than normal. Many people like a softer cookie so maybe we could try a softer cookie.
